Yield:100 Blended Burgers with Grace’s Recipe
Cooked Serving Size: 8.68 oz. or 243.275 grams
Meal Equivalencies: 2.5 oz.eq. meat/meat alternate, 2 oz. eq. whole grain-rich, 3/8 cup other vegetable, 1/8 cup red/orange vegetable and 1/8 cup dark green vegetable.

Ingredients:
100 Blended Beef & Mushroom Burgers
100 Croissant, WGR, Sliced
3 LB + 2 OZ USDA Sliced American Cheese, R/F, R/S
200 Pieces Premium Cooked Turkey Bacon
4 LB + 8 OZ Cucumber, with peel, raw
5 LB + 12 OZ Fresh Tomatoes, Sliced, RTU
5 LB + 12 OZ Romaine Lettuce Leaves, RTU
4 LB. Fresh Onions, Sliced, RTU

Directions:
Day of Service: Clean and sanitize work station.
Pre Prep: Pull croissants from freezer, open cases and pull out trays.
Place on sheet pans in single layer and place in cooler to thaw.
Wash hands thoroughly.
CCP: Hold below 41°F

Prep: Pull cucumbers from cooler and wash in produce sink.
Wash hands thoroughly and put on gloves.
Slice cucumbers into thin circles, about 1/8″ thick.
Place in food storage container, cover and date stamp.
Place in cooler until service.
CCP: Prepare foods at room temperature in two hours or less.
CCP: Hold below 41°F

Prep: Pull blended burgers from freezer and place at workstation,
Wash hands thoroughly.
Place bag of blended burgers in a steamtable pan.
Preheat steamer to high.
Preheat convection oven to 350°F.
CCP: Prepare foods at room temperature in two hours or less.

Cook: Place blended burgers in steamer for 35 40 minutes or until they reach an internal temperature of 165°F.
CCP: Heat until an internal temperature is reached of 165°F for 15 seconds

Prep: Pull FC bacon from cooler.
Wash hands thoroughly.
Place on parchment lined sheet pans.
CCP: Prepare foods at room temperature in two hours or less

Cook: Bake turkey bacon for 6 7 minutes or until crisp
CCP: Reheat until an internal temperature is reached of 165°F for 15 seconds

Hold: Place burgers in warmer and hold above 135°F.
Place turkey bacon into a lined steamtable pan and place in warmer, hold above 135°F.
CCP: Hold above 135°F

Prep: Pull croissants, cheese, sliced cucumbers, sliced tomatoes and onions and romaine leaves from cooler and place at service station in cold wells.
CCP: Hold below 41°F

Prep: Pull blended burgers and turkey bacon and place at service line in hot wells, holding above 135°F.
CCP: Hold above 135°F

Wash hands thoroughly and put on gloves.
Serve: Place 1 blended burger on bottom bun, top with 1 ½ sliced American cheese and two slices of turkey bacon.
Serve with a burger garnish boat consisting of: ¼ cup fresh romaine leaves, 1/8 cup sliced cucumbers, 1/8 cup sliced tomatoes and 1/8 cup sliced fresh onion on the side.

CCP: Hold below 41°F

Production Notes:
Blended burgers can be ovened by placing on parchment lined sheet pans and cooked for 7 9 minutes at 350°F.
Burgers can be wrapped with cheese, bacon and croissant and held for service.
Each blended burger provides 2 oz. eq. meat/meat alternate and ¼ cup other vegetable when topped with at least 1/8 cup visible vegetables.
